Domesticated by Native Americans of the Southwest, this drought-tolerant, heirloom bean has a more nutty, earthy flavor than other tepary beans, and remains firm when cooked. It has a low glycemic index, and is packed with fiber and protein. A product of Ramona Farms in Sacaton, Arizona, a community on the Gila River reservation.This prized heirloom bean has been handed down for countless generations among the Akimel O'odham (River People, Pima) and our cousins the Tohono O'odham (Desert People).


Basic Cooking Instructions:
2 cups of Ramona Farms Stotoah Bavi (White Tepary beans) cleaned & rinsed
3 quarts of water
Combine beans and water in a pot.
Bring pot to a boil and reduce heat to simmer.
Partially cover the pot and cook beans until tender (approximately 2-4 hours).
Add water as needed.
Salt to taste (after cooking).

White Tepary Bean

Brown Tepary Bean
Savory and slightly nutty in flavor.  The brown tepary retains its shape and firmness, yet is tender and makes a thin gravy, making it a perfect ingredient for soups, stews, dips and spreads.  It also makes a great addition to salads. 23 grams of protein in a 1/2 cup serving!

A rare and recent selection - the black tepary is firm textured and meaty flavored. The s-chuuk bavi is a special and a very limited tepary variety.Born of an ancient tradition of separating the black seeds before planting the white or brown seed teparies, the black seeds were selected, planted, grown, and harvested over several years to bring out the hidden traits of this unique tepary bean.

Ramona Farms Stotoah Bavi (White Tepary) recipe
Ingredients:
1 lb. Stotoah Bavi (white tepary beans) cleaned and rinsed
¼ cup onion (quartered or diced)
½ clove of garlic
1 whole dried chili pepper OR
1/4 cup chopped carrots and/or celery
Directions:
Sort and rinse beans.
Add 2 quarts of water.
Add garlic, onions and chiles, OR carrots/celery.
(If using carrots/celery add these in the last 30 minutes of cooking.)
Bring to a boil for 30 minutes.
Reduce heat, cover & simmer (add water as needed)
For 4 to 6 hours (or until tender).
